Home made apple sultana muesli bars made with oats, chia seeds and honey…… perfect for school lunch boxes!

Sam aged four, informed me the other day after kindy, where he had obviously been learning the days of the week, that there were two days in the week, Monday and his birthday. Well I guess he has learnt that Monday is a day of the week. It’s amazing how much kids love going to school. Now my two are bit older they ask every morning if they are going to school today. They haven’t even started yet, it’s just daycare but we call it school, cos it’s pretty much the same concept, take a backpack, lunchbox and fruit for sip & crunch. I hear them playing in their room and one is Mrs Green, the other Miss J, both teachers at their ‘school’.

Last week Georgia took home the school teddy ‘Rosemary’. We had to take her on adventures and include photos and drawings in her scrapbook for Georgia to talk about in show and tell. The first thing Georgia asked to do with Rosemary was take her to the pub! This is going to look great for show and tell. Just so you know, we don’t spend our days at the pub. It’s just the one near us has an amazing indoor playground and lolly dispensing machines…. kid’s heaven!

I realised quickly in this first homework experience how I could end up being one of those parents who do most of their kid’s projects. Not that this is my plan, but as I supervised Georgia so intensely while she was drawing in the scrapbook, I realised it was highly unnecessary and a bit of OCD coming out in me. Anyway, her teacher said she spoke really well and told everyone how much fun Rosemary had at the pub!

Apple Sultana Muesli Bars

So speaking of totally not pub food, these apple sultana muesli bars have become our go to for lunch boxes. They are also great for after sport snacks. Much healthier than store bought and way cheaper per serve! I freeze mine in zip lock bags and just grab one out when needed. You could swap and change most of the ingredients. Swap dried apple for apricot, chopped dates for sultanas. Leave out the chia seeds if you don’t have them or swap them for sesame seeds. This amount filled a tray 27.5cm x 18cm and gave deep, chewy muesli bars. You could halve the recipe if you prefer thinner, crunchy style, just cook for the same amount of time.

Ingredients

  • 1/4 cup / 45g dried apple
  • 2 cups / 350g sultanas
  • 1/4 cup / 40g chia seeds
  • 1/4 cup / 50g melted coconut oil
  • 1/4 cup / 75g honey
  • pinch cinnamon
  • pinch salt
  • 3 cups / 270g oats

Instructions

THERMOMIX METHOD

Pre heat oven to 170°C.

Place the apple, half the sultanas, chia seeds, coconut oil, honey, cinnamon and salt into TM bowl and blend 10 sec / speed 7.

Add remaining sultanas and oats and blend 10 sec / speed 3.

Line a tray with baking paper and press down evenly, it may help to lay a second piece of baking paper on top to spread evenly. Remove this top layer and bake in the oven 20-25 mins until golden.

Allow to cool in fridge before cutting in to bars.

NON THERMOMIX METHOD

Pre heat oven to 170°C.

Place the apple, half the sultanas, chia seeds, coconut oil, honey, cinnamon and salt into a food processor and blitz until well combined.

Add remaining sultanas and oats and for a couple of seconds to just combine.

Line a tray with baking paper and press down evenly, it may help to lay a second piece of baking paper on top to spread evenly. Remove this top layer and bake in the oven 20-25 mins until golden.

Allow to cool in fridge before cutting in to bars.

Notes
